New Oatmeal + Agave Nectar

Yesterday I received a record number of hits in one day: approximately 45. I appreciate those of you who read this blog and I hope you continue to do so.

Because this past weekend was so busy and exhausting, I've been going to bed early the past two nights. The plan was to wake up at 6 am and go running, but I decided I needed more sleep. Listen to your body! If you're hungry, eat. If you're tired, sleep. If you're in a bad mood, hit the gym. You DO have to push yourself sometimes, but trying to set high standards for yourself 24/7 is not realistic. I wish I could always remember that.

This morning I made some changes to my oatmeal that I definitely want to share with you. I heated 1/2 cup milk and 1/4 cup water in a pan on the stove, added 1/2 cup oats (old-fashioned) as it started to boil. After the oats cooked for a minute or two, I added a tablespoon of SunButter. Typically, I add the SB after the oatmeal has finished cooking and I've already transferred it to a bowl. When I do it that way, some bites are really creamy and SunButtery, but others are not. THIS time, by adding the SB during the cooking process, it was more evenly distributed and turned the oatmeal to a nice caramel color. Toppings were Chia seeds (see previous post) and blueberries.

Time for the morning beverage. I used to drink green tea (unsweetened) every morning, but recently I've been drinking 1 cup of coffee that is half-decaf. My sweetener? Agave Nectar. Agave Nectar looks like a bottle or jar of honey, but it's richer in color and not as thick. It's from the Agave plant (duh) and it's 25% sweeter in sugar, but because of its low glycemic index it doesn't spike your blood sugar. However, I just had my breakfast less than 1 hour ago so I wouldn't expect a spike in blood sugar regardless. AN isn't just for coffee though - people put it in smoothies, oatmeal, baked goods, etc.

  1. Yum, I love stove top oats! I haven't made them that way in a while though, I've been lazy and using the microwave :) I love agave nectar too!

    I haven't had Sunbutter in ages, I might have to pick some up once my others run out, haha.
