There Will Be Omelettes

Another successful Farmers' Market trip! This time, I met a friend at the Bardstown Road Farmers' Market, which is a 15 minute walk from my house. I would say that the St. Matthews Farmers' Market is a little more upscale than this one, but you can still find great produce here.

However, the St. Matthews Farmers' Market doesn't have these:



Feast your eyes on what is the best omelette I've ever had. Ever.

People line up by the dozens to get one of these babies. These omelettes are cooked with local eggs, local vegetables, local everything. We told the man we wanted everything: zucchini, mushrooms, tomatoes, potatoes, herbs, cheese, even CATFISH. I'm still in a bit of a food coma even though I ate it over two hours ago and have walked a lot since. If you live in the area and can get to this farmers' market, I cannot recommend this omelette enough. You will thank me!

A lot of the booths had spaghetti squash, which is what that yellow orb is. I LOVE spaghetti squash and I can't wait to cook it! It's the end of peach season so I will enjoy those while I can!
