SunButter Banana Muffins

As you probably know, SunButter is a diet staple for me. Recently, they sent me a nice little booklet with a coupon and some recipes, and I decided to try one today.

I present:


SunButter Banana Muffins!

I can't help but think of THIS video when anyone mentions the word "muffin."

Ingredients:
1 cup all-purpose flour
2/3 cup quick cooking oats
1/3 cup packed brown sugar
1/2 tsp. baking powder
1 cup milk
1/2 SunButter
1/2 cup mashed ripe banana
1 large egg, beaten
2 tbsp. canola oil
1 tsp. vanilla extract

Topping:
1/4 cup all-purpose flour
2 Tbsp butter, melted
2 Tbsp packed brown sugar

Preheat oven to 375 degrees F. Line 12 muffin tins with paper liners.

Combine the flour oats, 1/3 cup brown sugar....oh what the heck...just mix everything together. Fill the prepared muffin cups 3/4 full.

Topping directions:

In a small bowl, stir together topping ingredients. Sprinkle evenly over muffins.

Bake in preheated oven for 15-18 minutes, or until golden brown. Serve warm.

So, if you look at my picture, look at the recipe, and then look at the picture again, you'll notice that there is no topping on it. In an effort to make the brown sugar softer for the topping, I put it in the microwave. It burned. I said, "Screw it!" and baked the muffins without it.

The muffins are good. They are very moist and yummy, but I admit, they could use a topping. Overall, they were very easy to make and I will definitely make them again.
